Dr. Bill's curiosity led him to explore the potential of new charred oak barrels in enhancing Glenmorangie's delicate, fruity spirit. He handpicked a selection of bespoke casks, meticulously crafted to enrich the distillery's single malt. By subjecting these virgin wood casks to charring for the first time, he aimed to create a distinct style of single malt characterized by intense color and spiciness.
The majority of these early casks were allocated to the wood-finishing process, where their spiciness harmonized with Glenmorangie's intricate fruity notes. However, displaying the vision of a true innovator, he filled a small number of these casks with new-make spirit, envisioning the creation of an extraordinary single malt.
These experimental new char casks were left to mature in a cool, earth-floored warehouse for over two decades. During this extended aging period, the spirit within underwent a delightful transformation, evolving into a lusciously buttery whisky imbued with flavors of vanilla, chocolate infused with hints of orange, nuances of ginger, and a touch of sweet chili.
Dr. Bill was exhilarated by the spicy depths achieved in this groundbreaking experiment. Contemplating how to complement the whisky's unique flavor profile, he embarked on a journey to harmonize Glenmorangie's delicacy with the robust, toasty qualities of the whisky. Initially, he layered the oaky nuances with the soft, fruity character of Glenmorangie matured in first-fill bourbon casks. Subsequently, he introduced sweet subtlety by incorporating a portion of whisky finished in oloroso sherry casks.
After a patient aging period of 23 years, the resulting creation radiates with ripe fruits, rich orange chocolate, and subtle undertones of sugared almonds and spice. Exceptionally dynamic and vibrant, Glenmorangie Grand Vintage Malt 1998 elevates the distillery's renowned elegance with a splendid and spicy brilliance.
Tasting Note by Glenmorangie:Nose: Rich and mellow, with hints of toffee, ripe fruits such as pears, plums and baked apples, and some gentle oak. This is followed by some sweet vanilla, fragrant spearmint and a mellow, warming, waxy note, like fragrant incense. Some water releases Glenmorangie’s classic citrus notes of lemon and mandarin orange along with sweet tobacco, a touch of lavender, and the merest hint of ginger.Palate: A zesty, almost effervescent mouthfeel leads into a burst of vibrant fruitiness, some chocolatey notes, a soft butter candy flavour and a hint of toffee, juicy raisins and figs. Then comes a suggestion of orange-flavoured chocolate, clove, ginger and aniseed.Finish: Gentle and soothing with hints of sugared almonds, leather and dates.
In 1997, the distillery embarked on a remarkable journey by laying down its spirit in the finest bourbon casks. This marked the beginning of one of Dr. Bill's rarest wood experiments. After almost a decade of careful aging, a portion of this spirit was meticulously transferred into Château Montrose red wine casks. Sourced exclusively from the celebrated Saint-Estèphe appellation of Bordeaux, these casks are so limited in supply that only a few could be obtained. The deep, rich color of the wine previously held in these casks is so profound that it is even reflected in the wood of the whisky's case.
Driven by curiosity, Dr. Bill sought to uncover the unique soft, red fruit notes that these casks could impart to the whisky. Venturing into uncharted territory with a finish never before attempted or replicated at the distillery, he aimed to create a Glenmorangie expression that would stand dramatically apart from the rest.
Thirteen years later, this single malt whisky had evolved into a masterpiece, teeming with extraordinary depths of berry flavors. Encouraged by this remarkable transformation, Dr. Bill embarked on the complex task of marrying various casks to enhance the whisky's unique taste. He skillfully combined whisky aged solely in bourbon casks to highlight Glenmorangie's signature citrus notes. Whisky finished for extended periods in oloroso sherry casks contributed layers of sweetness and spicy finesse, while a carefully selected array of secret casks added their distinct influence.
After maturing for a total of 23 years, Glenmorangie Grand Vintage Malt 1997 now overflows with the luscious flavors of red fruits and candied sweetness, a true testament to the artistry and dedication that define its creation.
Tasting Note by Glenmorangie:Nose: Astonishing, perfumed and fruity complexity. Floral notes of rose, jasmine and carnation intermingle with soft red fruits, mint toffee, pastry or cake mix and a sweet confectionery top note. With water, even more soft, floral top notes like roses and carnations emerge, with a very subtle spiciness like sweet chilli, clove and ginger.Palate: A slightly tingly, gently spicy mouthfeel is followed by a symphony of sweet candy flavours, more soft red fruits, pineapple chunks and a taste reminiscent of pears and mandarin segments in fruit jelly. There are sweet ginger and chilli notes, gentle almond marzipan and vanilla toffee apple.Finish: Sweet, rich, long and gently spicy.

For The GlenAllachie Wine Cask Series, Master Blender Billy Walker initiated the process by expertly maturing their spirit in the finest American oak ex-Bourbon barrels before transferring the whisky into carefully chosen European wine barriques for a secondary aging phase. Adding a unique twist to this release, Billy blended four exceptional wine cask finishes to create a distinctive expression: The Cuvée Wine Cask Finish.
Drawing from the wine industry, the term 'Cuvée' typically refers to a blend that incorporates multiple grape varieties. Similarly, their 9-year-old Cuvée represents a harmonious marriage of spirits from several esteemed wine casks sourced from renowned regions like Bordeaux, Languedoc, and Valpolicella.
Billy meticulously monitored the character development of each individual barrique, skillfully blending the whiskies together. The resulting golden liquid reveals notes of elegant stone fruits, hints of toasted almonds, and a lively touch of zesty orange peel on the palate.
This limited expression is bottled without chill-filtration to preserve its flavor and retains its natural color, boasting an ABV of 48%. Their commitment to authenticity and delivering exceptional whisky shines through in this creation.

As one follows the meandering path along the river's edge beside The Singleton of Glen Ord, the tale of its unique enchantment carries significant meaning. Situated on the Black Isle, it stands as the sole remaining Single Malt distillery, and the allure of this whisky resides in its luxuriously intricate flavors. The mastery of slow craftsmanship has always been the secret, allowing each phase of production, from malting to maturation, to progress at its own unhurried pace, resulting in a liquid that is harmonious, velvety, and captivating.
This exceptional expression captivates the senses with its opulent character, honed over eight years of aging in wine casks.
Tasting Note by Singleton:Nose: Dry overall, the gentle nose gives a vinous first impression, backed by spicy, woody notes of oak shavings and beech. Alluring aromas of tart red berry fruit and creamy vanilla spread among them, and a hint of wax appears in the development. A little water softens the nose and relaxes the aroma, without great alteration.Palate: An ultra-smooth, mouth-filling texture prefaces a lively, intense taste; barley-sugar sweet, with a pinch of salt. That sweetness becomes pleasantly tart, with suggestions of gooseberry and crisp grape. At reduced strength, it is not as tart, but still spicy; the sweetness is highlighted yet the appetising spicy heat remains.Finish: Lengthy and palate-drying, as pepper-heat lingers in a last kiss of silken spice. With water sweeter, now with a trace of fondant in the aftertaste.
According to legend, the ancient black rock beneath Cardhu experienced a seismic event one day, causing it to crack with a thunderous sound. From within this fracture, a tremendous warmth surged forth, creating a tropical paradise where none had existed before. The biting winds that once prevailed transformed into gentle breezes, and the rich fragrances of passion-flower and pineapple gracefully wafted through the distillery and its surroundings, imbuing everything they touched with an extraordinary, exotic essence. At the stroke of midnight, the chasm sealed itself shut, returning to silence for all eternity.
Tasting Note by Cardhu:Nose: Beguiling first impressions begin with the fresh, sweet fruitiness of lemon zest and white grape enriched by exotic notes of pink grapefruit and ripe mango, all on a faintly mossy base, a note that evolves into freshly ironed linen. A notably spicy and woody note soars high above. Tasting Note by Bruichladdich:Nose: The nose opens with delicate floral notes of lily and geranium before warm orange zest and dried earthy peat smoke brings body and gravity. Banoffee pie and digestive biscuit come out from behind the peat smoke and carry forward this dram’s malty, fruity character. Cherry coconut and malted barley jostle with apricot and melon. The nose is so enticing; the sweetness of the oak and the outstanding rubbery, peppery phenolic notes are balanced perfectly with the fruit and floral style of our slow, careful fermentation and distillation.Palate: The first taste is a wondrous thing; all at once, the salinity, the fruit, the light peat smoke, and the sweet oak show their presence in a whirl of complexity and entice you in to go again. There is great texture from the spirit, and its time resting in carefully selected oak allows a subtle almond note to combine with coconut, caramel, vanilla, and muscovado sugar. The peat smoke in this whisky is as beautifully balanced as ever, weaving through the components, highlighting them but not dominating. A dram that is gentle on the palate yet has a tremendous depth of flavour.Finish: The finish again shows the balance we are looking for. The smoke, fruit, oak and floral notes melt into each other, and a beautiful creamy texture allows melon, peach and cherry to come through before dwindling into the dry embers of peat in the hearth.

The Ardbeg Distillery, while renowned for its distinguished spirits, is also famed for its location. Recognised by both the rugged locals and the more delicately attired visitors, the distillery often endures gusty winds, relentless rain, and ghostly mists. However, its potential onslaught by nature's fierce moods is mitigated by the protective embrace of the Mull of Oa.
Serving as a natural barrier, the Mull of Oa stands tall, sheltering the distillery from the Atlantic's formidable wrath. It is this geographical marvel that inspires the creation of Ardbeg An Oa.
Mirroring the roundness of its geographical muse, Ardbeg An Oa's character is noticeably rounded and mellow. This unique character is shaped by its time in the distillery's innovative Gathering Vat. Here, a blend of diverse whiskies from varied cask types - ranging from the sweetness of Pedro Ximenez and the spiciness of Virgin charred oak to the depth of ex-bourbon casks - come together. As they meld, they produce a whisky that's a harmonious blend of Ardbeg's signature peat, dark chocolate, and aniseed, cushioned in velvety butterscotch, black pepper, and clove. The resulting experience is a powerful, evolving symphony of flavors.
