    Introduced in 1993, the DoubleWood 12 was birthed from a method pioneered by The Balvenie's Malt Master, David Stewart, in 1982—a technique now widely recognized as 'wood finishing'. To craft The Balvenie DoubleWood, David Stewart MBE begins with whisky aged for at least 12 years in traditional whisky containers, consisting of American Oak ex-bourbon barrels and hogsheads. Following this, the whisky is shifted to large oak receptacles, known as "tuns", for a period spanning 3-4 months. Tasting Note by Bruichladdich:Nose: Aromas of warm citrus, tropical fruit, and sweet malty flour are immediate on the nose.     The 2023 release of Longrow 21 Year Old single malt is a finely crafted whisky from The Springbank Distillery. This edition is a blend of whiskies aged in 65% sherry casks and 35% bourbon casks. Longrow is distinguished by its peated character, achieved through a 48-hour peat drying process of the barley, and is made using the same traditional methods as Springbank. True to the distillery's commitment to authenticity, Longrow is produced entirely in-house, from distillation to bottling, without the addition of color or chill filtration. Tasting Note by Springbank:Nose: There is a savoury note in the introduction to this dram, along with hints of hazelnut and blackcurrants.Palate: Syrupy sweet yet delicate on the palate, there are notes of fizzy cola bottles and cigar-box smoke.Finish: A characteristically Longrow finish, reminiscent of shingle beaches, flint and seaweed.
