Billy Walker, a legendary figure in the world of whisky, is renowned for his talent for finding unique and interesting casks, especially from small-scale, premium manufacturers. Billy is a skilled chemist who has a genuine interest in flavour development during the ageing process. He examines how the whisky interacts with unique or infrequently used wood types.
This complex and uncommon single malt serves as a metaphor for Billy's present, in which he is assiduously putting into practise a wholly novel cask management philosophy. Mizunara, a rare and expensive variety of Japanese wood, is hardly ever used to age whisky. It's a challenging oak to work with since it tends to leak and twist as it matures, making it difficult to produce staves. This implies that the trees must reach an age of about 200 years before.

Tasting Note by GlenAllachie
Nose: Bursting with dark chocolate, heather honey and grilled almonds, with hints of sandalwood, ginger, orange zest, caramelised pecans and coconut shavings.
Palate: Waves of heather honey, cinnamon and crystalised ginger, followed by demerara sugar, dried dark berries, hazelnuts and fig syrup.
